After visiting the Atzaro hotel last Summer, we were determined to visit a few of their other locations across the White Isle on our first trip of 2019 (I say first, because I’m currently writing this post on a Monday morning, just days after landing from Ibiza, and currently in a taxi on our way BACK to the island!) and picked Aubergine as the place to enjoy our first dinner as a group. I’d heard fabulous things about the restaurant, located in the middle of the countryside on the beautiful island, from friends and Ibiza locals alike. The entire Atzaro group is known well for it’s authenticity, high quality and style, so I had no doubt that Aubergine would be any different.

Aubergine Ibiza is a fabulous example of the ever growing organic and ecological cuisine options on the island. With a field to fork dining ethos, guests dine al fresco, in the open gardens of a beautiful white wash farm house, right by the fields where much of the produce is grown and picked. If you though Ibiza was just for partying and bar food, you absolutely must think again!

With a roaring open stove where you can see your meals being created by the skilled chefs, each dish is a delightfully different take on some of your favourites; whether that’s aubergine hummus, aubergine carpaccio, or a burratina with tomatoes so deliciously fresh, you won’t be surprised to discover that they were picked that very morning just metres away from your table.

The perfect (very photogenic!) spot for those who enjoy fresh, healthy Mediterranean style food, there are plenty of options for vegetarians and vegans as well as those who enjoy fish and meat too. The location itself is spectacular, and the staff and fellow guests create a friendly family atmosphere. My top tips would be to order the Mediterranean Delights mix while you peruse the menu, and definitely leave room for desert!
